# The Art Of Yudofu Yudofu is my most favorite winter dish because of its simplicity. It is my most favorite Kyoto dish (Kyoryori) too. By the way, Kyoryori is literally the best cuisine in the world so if you haven't tried it you're missing the beauty of human culture. People usually eat yudofu with garnishes like scallions. But because I hate garnishes (those are bloat), I'll write the most simple and authentic recipe. ## Ingredient * Tofu * Konbu * Water ## Direction 1. Cut tofu. How to cut is your freedom, but I prefer 3x3. 2. Put all ingredients into a pot. 3. Boil them. 4. Eat with ponzu sauce. ## Extra You can make ramen, udon or zousui with leftover water because that's a proper dashi. Also you can substitute water with soy milk. That's called Tounyuu Yudofu.
