# Harmful Beans I don't know if beans are actually bad. But I took an advice from Pythagoras. I'm trying Pythagorean diet now. Doing it with western foods is similar to lent. So there is no big change. By the way the great lent of this year is 23 Feb ~ 11 Apr. But when it comes to eastern foods, it causes some problems. You can't use soy sauce, tofu, &c. After some research, I have realised that I can use almond and sesame instead. Like goma dofu in Buddhist temples. Or sesame paste instead of miso. But since I can't directly substitute soy sauce, I came up a stock for that. Quite western though. ## Stock * Leek * Garlic * Olive oil * Konbu * Salt * Pepper 1. Saute leek and garlic in olive oil. 2. Pour water. 3. Put konbu in. 4. Sprinkle salt and pepper. 5. When it boils, turn off the heat. 6. Put it in a refrigerator. It is not perfect. But at least you can eat noodles, soups and simmer vegetables with this. I haven't tried yet, but I guess salt + stock + lemon juice would make a substitute for ponzu. Lemon juice might be great for this scheme in general. It feels like using usukuchi shoyu instead of koikuchi. Clean and noble.
