# Fasting Foods 08/01 ~ 08/14 is the dormition fast. So I searched about fasting recipes. But except some, the results were some cringe oil-free vegan recipes with full of JS & Cloudflare. And even on the websites by Orthodox Christians, I felt that western foods without cooking oil genuinely suck. So I write some traditional Japanese foods here. Also check some Shojin Ryori. It is quite similar to fasting foods. But they prohibit allium instead of oil. By the way, Cheating: Air fryer. ## Recipes ### Konbu dashi Classic stock. Use this instead of oil. You can use shiitake instead of konbu. But I don't like shiitake dashi. The flavor is too strong. Maybe using it in pasta sauce would fit. * Konbu * Water 1. Put konbu in a pot. 2. Pour water. 3. Heat the pot. 4. When it boils, turn off the heat. 5. Put it in refrigerator and wait. ### Misoshiru Use miso not containing katsuobushi dashi. If you can get, I recommend white miso. * Konbu dashi * Miso * Literally any ingredients you want -- I just use wakame, tofu, scallion. Pretty standard. 1. Boil dashi. 2. Put the ingredients in. 3. Simmer them a little. 4. Turn off the heat. 5. Put miso and scallion in. 6. Mix. ### Ponzu Commercial ponzu contains katsuobushi and mirin. Traditionally ponzu contains yuzu. But I prefer lemon. Lemon is way more readily available. And I recommend light soy sauce. You can use ponzu for dipping sauce, salad dressing, even nabe base. By using syrup instead of lemon jam, you can also make tsuyu. You can eat noodles with it. Well traditionally it is mirin instead of syrup. But mirin contains alcohol. * Soy sauce * Konbu dashi * Lemon jam 1. Mix them all. ### Konbu marinated in ponzu So you can use konbu that was used for dashi. * Drained konbu * Ponzu 1. Mix them. 2. Wait some time to marinate. ### Ochazuke I use barley instead of rice. But you can use any grains. Ochazuke is basically a traditional fastfood. You can use dashi if you are too lazy to boil tea. * Cooked barley * Tea * Any pickles 1. Pour tea on barley. 2. Eat with pickles. You can just use marinated konbu. ### Hiyayakko * Tofu * Green onion * Soy sauce 1. Put green onion on tofu. 2. Sprinkle soy sauce. ### Yuba * Yuba * Ponzu 1. Boil yuba. 2. Drain it. 3. Eat with ponzu. I have read that by grilling yuba, you can substitute ham. I haven't tried it though.
